Not Just Haggis

My first food post! I'm one of those people who get inordinately excited by new cookbooks and recipes. Breads and deserts have always been my specialty, although in the past few years I've been working on learning more of the meats and entrees (including cooking full traditional Thanksgiving dinners a few years).
And so, for tonight's dining pleasure, drum roll please...

Scottish Shortbread!
One of my favorites.
Ingredients: 2 1/2 c. flour, 1/4 c. ground almonds, 1 c. butter softened, 1/2 c. superfine sugar, grated rind of 1/2 lemon.

Preheat the oven to 350 degrees F, and grease a jellyroll pan or baking sheet. Blend all the other ingredients in a food processor. Spread out onto pan and flatten. Bake for 20 min. or until light golden brown color. Mark the shortbread into shapes while still soft, and then allow to cool.

Taa-daa! For those of you who think Scottish cooking consists only of haggis, try this.
